I recently made this and it went down a treat with the boys and Mrs OMG. The picture was quite popular on Instagram also.
So I thought I’d share the recipe. It really is very simple to make.
4 oz Butter
2 Tablespoons Golden Syrup
200g Milk Chocolate
100g Dark Chocolate
4oz Digestive Biscuits roughly broken
4oz Rich Tea Biscuits roughly broken
2oz Nuts roughly chopped (I omitted as kids not a fan of nuts)
4oz Mini Marshmallows
2oz Glacé Cherries
Line a 7″ tin with grease proof paper
Place the chocolate, golden syrup and butter in a glass bowl over a saucepan of simmering water, stirring constantly until it is all melted.
Add the rest of the ingredients and mix. Until all dry ingredients are coated with chocolate mixture.
Transfer to prepared dish and level out.
Leave to set.
Cut into squares and hide from the rest of the family.
The beauty of Rocky Road is you can alter the ingredients to suit. If making for adults I use 150g of dark and milk chocolate. For kids I use slightly more milk chocolate.
I’ve also added dried fruit, a bit of mixed peel for a more festive version.
